Butcher Service Counter with Assisted Wash
Project at a glance
Redesign of the butcher counter to ensure M0-class preservation while halving cleaning time and cutting energy use. Scope includes remote/integrated refrigeration, a sealed and component-free bottom tank, and assisted wash. Airflow was reworked for laminar separation; technical components were relocated to improve access and ease of hygiene.

What we delivered
- Temperature class M0 [-1…+4 °C] — ensures optimal preservation of unwrapped meat on display for longer without loss of properties
- Display hygiene time (daily) reduced to 15 minutes — a 25% reduction
- Serve-over counter bottom hygiene time without auxiliary washing system (weekly) reduced to 30–45 minutes — a 30% reduction
- Serve-over counter bottom hygiene time with auxiliary washing system (weekly) reduced to 20–30 minutes — a 50% reduction
- Energy class D — a 45% reduction
- Load volume of 160 l/mlm, an increase of more than 4%
- Extended component lifespan due to placement outside the waste and water spray zone
- Hygiene and cleaning process requires no intervention from a maintenance technician

Refrigerated display case for butcher shops, developed for modern food retail, combining high energy efficiency, ergonomic improvement, and optimised preservation conditions for unwrapped fresh meat.
Designed to adapt to the store's layout, the solution improves product accessibility, reduces physical strain on the operator during serving and restocking tasks, and minimises ergonomic risks associated with excessive reach.
As an innovative feature, it integrates an auxiliary washing system, significantly reducing cleaning time as well as water and detergent consumption.
At the same time, it presents itself as a low energy consumption solution that ensures compliance with the M0 preservation class, guaranteeing thermal and hygrometric stability.
